About the Recipe
This recipe is a quick and easy healthy alternative to scrambled eggs! I find it very filling but is also delicious with your favourite toast or rice cake. You can add chilli in when sauteing onion and capsicum for a bit of spice. You can also add avocado as another good fat for the meal.
Ingredients
300gm Silken tofu
Half a red onion
Half a small green capsicum, diced
One medium tomato, diced
Half a teaspoon of mixed herbs
Salt and pepper
A quarter of lemon
One tablespoon of hummus
A handful of baby spinach
Directions
Place oil in a frypan on a medium heat, once warm, add onion and capsicum cook until softened.Â
Add tofu, salt, pepper, mixed herbs and tomato and cook on a medium to high heat.Â
Plate tofu on top of baby spinach with a squeeze of lemon and serve with hummus.
